A Great Meal

We had a GREAT lunch today, made up of chicken mole (pronounced ‘mol-ay’), rice, refried beans (with peppers in them), and hot corn tortillas.  Mole is a traditional Mexican dish that is made from the cacao bean (which is where chocolate comes from).  This caldron of bubbling goodness is one of Mommy Juanita’s specialities. She is our head cook on campus. Her job is to cook for all of the mediano kids (approximately 60 boys and girls) three times a day. As a result of her work, we are constantly having to buy bigger clothes for our kids!

After lunch we celebrated all of the February birthdays.  It was a great meal!
