We had a GREAT lunch today, made up of chicken mole (pronounced ‘mol-ay’), rice, refried beans (with peppers in them), and hot corn tortillas. Mole is a traditional Mexican dish that is made from the cacao bean (which is where chocolate comes from). This caldron of bubbling goodness is one of Mommy Juanita’s specialities. [...]
